\nTV chef and owner of Michelin-starred restaurant claims he didn\u2019t notice staff\u2019s long working hours and their underpayment was unintentionalFormer BBC1 MasterChef host and Michelin-starred, Le Gavroche restaurant owner Michel Roux Jr has spoken out for the first time since it was exposed he was paying chefs below the minimum wage, saying: \u201cI am embarrassed and I am sorry.\u201dThe statement follows Guardian\u2019s revelation last month that Roux was paying some of his Mayfair restaurant staff, rates as low as \u00a35.50 per hour when the legal minimum is \u00a37.20 per hour. Chefs preparing a menu including starters costing as much as a \u00a362.80 lobster mousse with caviar and champagne sauce, were found to be working routinely 62 to 68-hour weeks for about \u00a3375 before tax.
